I think you have it exactly right; college football coaching is getting to be a young man's game. The amount of energy it takes, the need to relate to 17-year-olds, all the other business with staff, boosters...it doesn't seem a good fit for what is objectively a grumpy old man. Whether he believes it nor not, it's a great thing to say when you're leading a team.
